Duck eggs are the chicken egg's over-the-top cousin. They have similar genetics but are so wildly different.

 

Nothing soft boils or poaches quite like a duck egg, thanks to the protein rich white that sets up extra soft and fluffy, while holding its shape better than any other egg. And the yolk! Don't even get us on that ooey, gooey goodness because it can hardly be described.

 

Duck eggs are available Spring through Fall, depending on when the ducks feel so inclined the lay them. We sometimes beg and plead, but as we've learned over the years, you just can't push a duck...
